We began this series with an overview and a recipe, and in this section, we provide a chicken casserole easy recipe and more ideas. Casseroles are wonderful as they can be prepared ahead, then baked as you enjoy visiting with family or guests.
This chicken casserole easy recipe can be prepared quicker by using a
rotisserie chicken. It can also be made with chicken or chicken breasts you prepare yourself. Since it includes the flavors of dressing/stuffing, be sure and add some cranberry sauce to the plate or on the table. Sweet potatoes in some form, along with green beans or asparagus and hot rolls and butter will complete the delicious meal and colorful presentation. Choose a cool refreshing dessert, perhaps Chocolate Mint Ice Cream or a chilled mixed fruit compote with small butter cookies on the side.
Chicken Casserole – Easy Recipe

1 fryer or 4 chicken breasts, cooked and deboned, (save broth)
(option: use chopped, deboned rotisserie chicken)
1 can cream of mushroom soup
1 can cream of chicken soup
1 stick melted butter
2 cups chicken broth from cooked chicken or boullion cubes
1 (8 oz.) pkg. Pepperidge Farm Cornbread Stuffing
Cut chicken into small pieces. Mix stuffing with melted butter. In separate bowls, mix one can of soup with one cup broth. Layer these in a 2 quart casserole dish as below:
1/3 stuffing mixture, ½ cut up chicken, 1 cup soup mixed with broth, 1/3 stuffing mixture, remaining chicken, then the second can of soup mixed with broth. Top with remaining stuffing. Bake at 350 degrees for 25 minutes.
Bonus Recipe – Sweet Potato Casserole
As a bonus for your recipe file, we are sharing a favorite sweet potato casserole recipe from our Tate Family Cookbook. This is one good way to add color and flavor to any menu, especially with chicken or pork. The sugar and pecan topping adds a crunch to the meal. You may also consider a crusty bread rather than soft rolls to add a different texture.
Senator Russell’s Sweet Potato Casserole
(The Tate Table-cook book-l983)
1 cup white sugar
1 tablespoon vanilla
¾ cup margarine or butter
3 cups sweet potatoes, drained (canned okay)
½ cup milk
1 cup brown sugar
1/3 cup flour
¼ cup soft margarine or butter
chopped nuts (pecans recommended)
Mix white sugar, potatoes, eggs, vanilla, milk and ¾ cup margarine (or butter) with mixer. Place in buttered casserole dish. Combine topping and sprinkle on potatoes. Bake 30 minutes at 350 degrees. Let stand about 30 minutes before serving. (Serves 8)
