An Oats Morning – Oatmeal Recipe

For as long as I can remember my mom has prepared a bowl of oatmeal for her breakfast each and every morning…with an exception to Sunday when she’ll “treat” herself to something decadent like a poached egg on a tinge-of-butter toasted English muffin or a one-egg omelet with a wee bit of cheese and {cough} a slice of ham or bacon.

And you know what? My mom, heading into her 80’s, is pretty darn healthy. Sure, sure there are a lot of other things that come into play, like family history and that she mostly makes good choices for better health…but I gotta say her routine has stuck with me and I love having oats in the morning!

A couple of important health benefits to munching down a bowl of oatmeal include…
– Oats contain more soluble fiber than any other grain, meaning you feel fuller longer because it takes a while to digest.
– Oats possess anti-inflammatory properties which is a major help for skin issues
– Oats are known to be a heart-healthy, antioxidant food

Plus, just the routine of a regular, healthy breakfast to start your day is known by health professionals to diet-conscious people everywhere to be the best way to fuel you for the day, gives you the leg-up on making better choices overall!

Mom’s Quick and Incredible Oatmeal Recipe

1/3 cup old-fashioned oatmeal (ditch the quick rolled oats, old-fashioned are nuttier and better for you ;))
2/3 cup cold water

Directions
Place old-fashioned oats and water into a large micro-safe bowl, stir. Microwave on high for one minute, stir and microwave for an additional 45 to 60 seconds, watching to make sure the oatmeal does not bubble up and spill out of the bowl. Remove from the microwave, stir and let sit for 30 seconds. Now dress your oatmeal; as desired and add in your choice of milk (regular or soy).

Oatmeal Topping Ideas…

– A 1/4 cup Kashi Go-Lean cereal (in the pic and my fave)
– Better sugar subs like Stevia, Raw Sugar or AgaSweet
– Fresh or dried fruit of choice…in season fruit that is fresh from your farm market starts your morning off perfectly!

    Oh Correen! Your oatmeal looks better than mine! I have to admit I have been on a daily oatmeal regimen since I started dieting first of the year. But I use the instant kind. I have to try it your way!
    PS I don’t think I had ever eaten oatmeal before this year – we eat grits around here! 🙂
